Stuffed Mushrooms

Aunt Dale's Style
Ingredients:
1 pound of mushrooms (use half the stems)
3 tablespoons of parmesan cheese
1 clove of garlic
1 small onion 
1 cup of bread crumbs
1 tablespoon of fresh parsley (Italian)
1 stick of butter
 
Clean mushrooms with damp cloth (don't run them under water). Break off the stems. Save caps. Chop up stems, onion, parsley, and combine with the rest of ingredients. (melt butter first). (you can put all ingredients in the food processor and then stuff with a pastry tip and bag - but that is optional). Stuff mushrooms with stuffing. Drizzle a small amount of olive oil over the mushrooms. Just before baking. Bake till done- till your liking- 350 degrees for 30 minutes. Laura's Notes: I usually add all the stems to mine, and taste the stuffing first, just to make sure I like it. If it is too dry - add more butter, too wet - add more bread crumbs. I probably add more garlic too! Enjoy. You can make them ahead of schedule, bake them for 20 minutes, and freeze. They will not look as pretty, but they will taste fine.
